If you're a fan of beans on toast you are going to love this recipe! Edamame and pea salad with lots of sumac, mint, lemon, shallots, greek yogurt and Drops of Heal CBD infused olive oil on some fresh sourdough. So fresh & zingy and leaves you feeling good!
- Edamame beans
- Drops of Heal CBD infused olive oil
- Lemon juice
- Sumac (so underrated & delicious!)
- Diced shallots
- Diced mint
- Greek yogurt
1. For the dressing add @dropsofheal olive oil, lemon juice, sumac, diced shallots & mint to a bowl.
2. Cook the peas and edamame until soft.
3. Add beans to the dressing, season with salt & pepper. Combine well.
4. Toast your sourdough, add a dollop of greek yogurt and top with your mixture.
