DAY 2: CBD Truffle cauliflower with mushroom & sage, topped with a poached egg

Truffled cauliflower purée with mushroom and sage butter ~ infused with organic CBD, topped with a runny egg and freshly grated Parmesan. 


This is an unbelievable combination for only just 30 minutes of your time. If you your hands on our CBD Truffle oil you need to try this! 


Ingredients: 

  • 1 medium cauliflower head, cut into florets
  • 1 garlic clove
  • 2 Tbsp CBD Truffle oil
  • 2 Tbsp Parmesan cheese (plus more for topping)
  • 1/2 lbs mushrooms of choice
  • 2 Tbsp natural CBD olive oil
  • 2 Tbsp butter
  • 10-12 sage leaves
  • 2 eggs

Method: 

  1. Bring a pot of salted water to a boil.  Add the cauliflower florets and cook for 15-20 minutes, until soft.
  2. Whilst that is cooking sauté the mushrooms in olive oil, salt and pepper. Remove from heat. 
  3. Drain the cauliflower. Add to a heat processor along with the garlic glove, CBD Truffle oil, Parmesan, salt & pepper. Process until smooth. 
  4. Make a poached egg by boiling hot water, swirling and popping your egg in for 6-8 minutes. 
  5. Just before serving add the butter and sage in a pan to fry. 
  6. Assemble the dish starting with cauliflower purée, mushroom; sage butter and place a poached egg on top. Sprinkle with some Parmesan!
