Fattoush salad makes a frequent appearance at Middle eastern dinner parties. A simple, chopped salad dressed in a CBD infused zesty lime vinaigrette. Fattoush essentially means ‘bread salad’, said to have originated from Northern Lebanon where Lebanese farmers would fry leftover pita scraps in a bit of olive oil for extra flavour. Then they would build their fattoush, throw the pita chips in along with other vegetables that were in season at the time.
Nowadays, we are blessed with fresh ingredients all year round - but this recipe is customisable to your preferences. The core of the salad is cucumber, tomatoes, lettuce and green onions. In the dressing the star ingredients is a generous dash of sumac spice which gives its distinctly complex flavour. You can find sumac in most supermarkets nowadays. Ingredients for salad:
1 head of Romaine Lettuce, finely chopped
1 cup Cherry Tomatoes, finely chopped
1 whole Cucumber, finely chopped
5 Radishes, stems removed, thinly sliced
5 Spring Onion, diced
2 loaves pita bread
Pinch of himilayan Salt
1 tsp Black Pepper
Ingredients for vinaigrette:
4 tbsp Natural CBD Olive Oil
2 tbsp Sumac
Method for the salad:
Dice romaine lettuce into small pieces and add to a big bowl.
Finely chop tomatoes, cucumber, radish and spring onion and add to bowl.
Add pomegranate to the bowl. Mix well and set aside.
For the vinaigrette, squeeze a lime into a small dish, add 4 tablespoons of Natural CBD Olive Oil and 2 tablespoons of sumac.
Mix well and add to bowl of fresh ingredients.
Mix salad and dressing well.
Add a pinch of salt if wanted and serve.
Method for the bread:
Cut the pita in desired shape (triangles, squares or strips). Toss with Natural CBD Olive oil, salt and pepper and fry on medium heat.
Stir frequently until the pita bread is golden brown.
Mix into salad and serve!
